Meet The Team

The tradition of a family-run pub continues with Finn and Jon bringing their passion and experience to The Pantiles. In the kitchen, Toby leads with creativity and skill, while Vicky and Daisy head up the front of house with warmth and care. Together, our close-knit team creates an atmosphere that feels more like family — offering a dining experience that’s relaxed, welcoming, and truly unforgettable.

Finn Alexander-Birch

Now bringing these flavours to The Pantiles, Finn is the creative force behind our kitchen at The Ragged Trousers.

Finn trained at Gordon Ramsay’s prestigious Savoy, where he honed his skills in the fast-paced world of London’s top restaurants. However, his love for Kent — where he grew up — drew him back home to showcase his culinary talents in a place closer to his roots.

​

At just 22, Finn took on The Hopbine Inn, where he quickly made his mark by bringing passion, precision, and a fresh approach to the menu. Now, at The Ragged, he continues to develop his craft and lead the kitchen with creativity and care.

Jon brings boundless energy, charisma, and a wealth of experience to The Ragged Trousers.

After years working in the music industry, he decided to swap fast-paced life for something a little more grounded—though no less full of character. That change led him to our sister pub, The Hopbine, where he quickly became a familiar face and a driving force behind its warm, welcoming atmosphere.

​

Now at The Ragged Trousers, Jon continues to do what he does best: bringing people together. Whether he’s behind the bar sharing a story, a smile, or your favourite pint, he makes sure everyone who steps through the door feels right at home. Working alongside Finn, he’s helping to keep The Ragged buzzing with the same heart and spirit that make our pubs so well-loved.

Head Chef 
Toby Carter

Toby began his culinary journey in charming countryside pubs, where he developed a love for hearty, honest food. His passion for cooking then took him further afield—spending five years perfecting his craft on private boats and in luxury chalets, creating memorable meals in some truly unique settings.

After a year in Canada, cooking in bustling slopeside restaurants and exploring the beauty of the west coast, Toby has returned home to the Pantiles—bringing his wealth of experience, adventurous spirit, and flair for flavour to our kitchen.

Front of House Manager
Daisy Murdoch

Daisy has worked as an Assistant Manager at a Michelin Guide–listed restaurant, where she developed a deep understanding of high-level hospitality and fine dining operations. 

 

Her career has also taken her to the luxury superyacht industry, sailing across the Mediterranean and delivering exceptional service in a uniquely demanding environment. She has successfully run a chalet in the Alps, managing both operations and guest experience to an exceptional standard. 

 

Most recently, Daisy has been part of the team at The Hopbine Inn, The Ragged’s sister restaurant, where she has continued to expand her skills in hospitality leadership.
